Niina gave me a Finnish cookbook written in English! "Flavours from the Finnish Countryside". Saturday I headed out to make Salmon and Potato Casserole a la Markus. I bought the salmon in Finnish and had Chris' help buying semi-floury potatoes in Finnish. The potatoes are Van Goghs. Here is the finished dish.
We ate this after our ice swimming adventure.
Looks like Finnish comfort food - so, what does a 'van gogh' potato look like? Small, brown and lumpy like the 'potato eaters'?
